Grilled Bell Pepper Salad



At Chez Mina, we are all about tradition!  Grilled peppers are a must for the Piccolo-Gualtieri family during BBQ season.  While meats, fish and poultry are always favourites, grilling vegetables soaked in olive oil, garlic, herbs and spices is a healthy alternative. 
    
There are several, but easy steps to follow to serve up a colourful Grilled Bell Pepper Salad at your table that goes well with your grilled meats or vegetarian menu.  


Step 1
Buy an array of different coloured bell peppers because this will make your dish look appetizing.  The amount of peppers depends on the number of guests at your table.  Estimate two bell peppers per person.

Step 2
Cut peppers in half and scrape out the seeds.

Step 3
When your BBQ has reached approximately 350-400 degrees Fahrenheit, place the peppers on your well-oiled grill.*

Step 4
Keep a watchful eye over your peppers.  Rotate or flip them so that all sides of the pepper have touched the flame.  Allow the skin to become completely charred.  They are ready to come off the grill when the peppers are soft and squishy.  

Step 5
Place your charred peppers in a glass bowl and cover with a plastic wrap.  A plate overtop will do as well, but make sure that the bowl is well sealed. Do not skip this step as it will make your job easier in Step 6.  Let the peppers cool down.






















Step 6
Once the peppers have cooled, and are easy to handle (at least 1 hour), peel off the skin.  Place all the peppers in a mixing bowl.  You can keep the halves as they are, or slice them in half again.

Step 7
To your mixing bowl, add a generous amount of olive oil, seasonings including fresh herbs. Our favourite herbs for this salad are fresh parsley and basil, then we add fresh garlic and salt & pepper to taste.  Mix everything gently with your hands or soft spatula as the flesh of the peppers is delicate, and can easily tear.






Step 8
Transfer your beautifully grilled peppers into a serving bowl and top with fresh basil leaves.



Serve as a side dish with your grilled meats or as a main dish with provolone cheese to complete your vegetarian meal.  You have leftovers? No problem! They keep well in the fridge for at least one week, if they last that long!   Add leftover peppers to your pizza pie dough as a yummy topping, or as an additional layer in your sandwich.  Or try adding them as a topping to your spaghetti or other pasta dish.  Buon appetito!
